Seared tuna with bean salad
Fresh tuna wants ninety seconds a side and a rested pan that is properly hot. Cooked through it is dry and there is no way back.
Ingredients
- tuna280 g
- white beans280 g
- tomato150 g
- red onion50 g
- rocket50 g
- olives40 g
- olive oil1 tbsp
- lemon30 g
- black pepper1 to taste
- salt1 to taste
Instructions
- Take the tuna out of the fridge 15 minutes before; cold fish seizes in the pan.
- Dress the drained beans with the oil, lemon, thinly sliced onion and pepper, and leave them to sit.
- Get a heavy pan very hot. Sear the tuna 90 seconds a side - it should still be pink in the middle.
- Rest 2 minutes, slice thickly, and lay over the beans with the tomato, olives and rocket.
