Turkey and white bean skillet
Twenty minutes, one pan, four portions. Crushing some of the beans into the sauce thickens it without flour and is the difference between a skillet and a plate of mince.
Ingredients
- turkey mince500 g
- white beans500 g
- canned tomatoes300 g
- spinach150 g
- onion100 g
- red pepper150 g
- olive oil1 tbsp
- garlic3 pc
- smoked paprika1 to taste
- oregano1 to taste
- salt1 to taste
- black pepper1 to taste
Instructions
- Brown the turkey hard in the oil, breaking it up, 5 minutes. Do not stir it constantly or it steams instead of colouring.
- Add the onion, pepper and garlic with the paprika and oregano, 4 minutes.
- Tip in the tomatoes and drained beans, then crush a quarter of the beans against the pan to thicken the sauce.
- Simmer 5 minutes, fold the spinach through at the end. Keeps three days.
