Tuna and white bean toast
34 g of protein for under 450 calories, from two tins and a slice of bread. The most efficient breakfast I make and the one I keep coming back to.
Ingredients
- canned tuna80 g
- white beans120 g
- wholemeal bread55 g
- olive oil1 tsp
- lemon15 g
- red onion20 g
- parsley1 to taste
- black pepper1 to taste
Instructions
- Drain the tuna properly and flake it; drain and rinse the beans.
- Crush about half the beans with a fork, leave the rest whole. That mixture holds on toast instead of rolling off.
- Fold in the tuna, oil, lemon juice and finely sliced onion.
- Pile onto toast, parsley and pepper. The mixture keeps two days.
